Green Magic Sauce

This green magic sauce is just as the title suggests: magic! It is super yummy and it’s so versatile, it can be used on nearly anything. Pasta, veggies, rice, fish, chicken, potatoes, as a salad dressing or marinade, sandwich spread or a dip. My son actually said “I would dip my fries in that!” You can bulk it up as a pasta sauce by adding a nut, such as pine nuts, pistachios or walnuts.It’s got tang, zip, creaminess, healthy fats and green goodness from herbs and green vegetables. It is vegetarian and vegan and soooo healthy. You can add your choice of additional herbs such as oregano, basil, or mint. You could also add a subtle green such as arugula, if you choose. Give it a shot.

Ingredients:

1 to 1.5 ripe avocados (depending on how much you want to make)
Juice of 1.5-2 limes
1/4 c olive oil
3 large cloves of garlic
Big handful of cilantro (about a cup)
Big handful of parsley
3 green onions or scallions, green and white parts
1 large or two small jalapenos, ribs and seeds removed
Pinch of cumin
Pinch of coriander
1 tsp. of raw agave (optional)
1/2 c toasted pine nuts, pistachios or walnuts (optional)
Sea salt and pepper to taste

Instructions:

Rough chop peppers, onions, herbs and add to the bowl of a food processor. Add garlic, lime juice (nuts and agave if using). Pulse a few times to reduce the bulk, open the bowl and add cumin and coriander. Replace top and turn on processor to low. Drizzle in olive oil. Process until smooth. Open bowl and add salt and pepper. Taste for seasoning and adjust for texture. If it is too thick, add a tablespoon of water at a time until you get the texture you are looking for.
